View Full Version : My annual liquid nitrogen ice-cream making

As every year for the past 4 years we went down to my friends laboratory in the technion (university) and made ice-cream using liquid nitrogen, this year I made chocolate with almonds :)

As this is going to be the last year we’ll be able to do it :( (in the technion at least) I wanted to commemorate it here..

Just my guess, but I'll bet it tasts like chocolate with almond ice cream. Sorry I just couldn't resist.

Jdarling’s description of the taste fits quite good :)

Well after it gets warmer (-20-10C) it becomes smother then usual ice-creams. The ‘normal’ ice-creams you buy in a store uses a lot of air to make feel smooth (volume / weight ratio), LN has more mass and its even smother.

When you eat it right after it is made (im not sure how cold it is, I think around -100¬?C (LN is ~-190 ¬?C)) its hard and breaks easily, its soo cold it sticks to your tongue and hands. Y
ou find your self blowing air on your ice-cream in order to try and warm it :)

There is a british physicist who claims that the best ice cream can be made only by using liquid nitrogen. Never tried so I can't verify if its true

Anyopne got any 'extra' liquid nitrogen laying around? We can start the very first Online Liquid Nitrogen Icecream store in history. :D

its cheep about 1 US$ for 4 liter, we used ~15. Problem is you can simply buy it, you also have storing problem (look at the tank in the 1st photo, it has more isolation then material volume)
