[center] is not a valid BBCode tag, but you should be able to use old school HTML <center>, I think.

BBCode does not have a center tag. It's very limited in fact. Hence why we enabled the use of several HTML tags for use in the forum posts and signatures.

Btw, it was me who has changed your signature to bold, as I was trying various ways to get centering working.
