I just noticed that my personal messages I've been sending arn't showing up in my Outbox... So, I'm curious to know if they are going out, and if so, how do I get them to show in my outbox again?

If you go to your profile page (Personal Message Options):

There is a checkbox:
"Save a copy of each Personal Message in my outbox by default."
just set that
